We use Granger's Footwear Proofer spray occasionally to revive water repellency and beading on our Merrell Moabs. There are similar products like Nikwax Fabric & Leather Proofer in pump-action and spray variants, all good. The cleaner the footwear before spraying, the better it works.
We find that no matter how carefully we clean them and apply spray, the water beading is never quite as good as when they were brand new.

I have a pair of Merrell Hommes Gortex boots ,which I'm finding very good in all weather.
The last walk I did was very muddy and the boots were caked!
I dried them off and brushed them clean with a stiff brush.
Is there a waterproofing spray that you guys recommend for this type of boot?
I feel that after a few months of this punishment the waterproof quality might diminish .
